Today, I tried a recipe from Pinterest.

Trying a recipe from Pinterest is always an experiment, because they sometimes aren’t as good as you think they should be. Today I tried Philly Cheesesteak Stuffed Bell Peppers. And I’ve never made any kind of stuffed bell pepper, but I’ve eaten them, and I know there is a fine balance between undercooked and overcooked bell pepper.

Well, they turned out pretty good. Here’s the recipe:

  • 1 package of the cheap Wal Mart roast beef lunch meat
  • 1 large onion
  • Four green bell peppers
  • about 1/4 cup of cheddar cheese
  • 8 slices of provolone cheese
  • Salt and pepper
  • Paprika
  • Worcestershire sauce
  • Garlic
  • Butter and oil

I put enough butter and oil into the pan to saute the onion. I didn’t dice it, but it was a little smaller than julienne cut. Add either garlic powder or minced garlic powder to taste at this step.
While that’s sauteing, slice up the whole package of roast beef into strips. Personally, I found that a pizza cutter worked really quickly and cut through several slices at once. Add the beef into the onions, and keep sauteing. At this point, season it to how it tastes good to you. I added probably 1/8th cup of Worcestershire sauce, a shake or two of paprika, and a couple shakes of salt. Stir the mixture up, turn it to low, cover, and let everything combine into deliciousness.

In the meantime, Preheat the oven to 400, and cut the bell peppers in half lengthwise, and take out the stem and seeds. lay them in a cake pan, and sprinkle a little cheddar cheese in the bottom. Spoon in the delicious meat mixture, and top each half bell pepper with a slice of provolone. Bake in the 400 degree oven for 15 minutes. The cheese will turn golden brown and melty.

There you go! It was delicious. I wish I had taken pictures. We had some friends over though, and it was great fun.

 

We’re on day 16 of being married, and things have leveled out some. Today was a new kind of sweet. It’s nice waking up next to your best friend. William has been working on and talking to God about what being the spiritual leader means, and the changes in him are really cool to see. Every day he grows in confidence and strength, and becomes more loving and more encouraging. I have so much respect for him. I’m one lucky girl.
